This is my version now called The Best Jam Biscuits
2 cups flour (I used Bob's Gluten Free All Purpose Flour)
4 tsp baking powder
pinch of salt
1/4 cup coconut oil (solid, not melted)
3/4 cup coconut milk (I used Silk Original)
Preheat oven 425 degrees
Mix flour, salt and baking powder together.
Cut coconut oil into flour mix with pastry cutter.
Form into a dough ball to be pressed out to 1/2 inch thickness.
Dust edges of the cookie cutter with flour between cuttings.
Bake 10 minutes.
Makes one cookie sheet full of goodness.
Comments from the critics are: Light. Fluffy. Filling. Make them all bite size next time. What is in it anyways? Tastes different than our usual, but good. Best with jam.
